Napa Chicken Salad Stuffed Bell Peppers

INGREDIENTS

  • 1 rotisserie chicken

  • 1 cup red grapes, sliced in half

  • 1/3 cup avo mayo (I used @chosenfoods)

  • 1/4 cup mustard (I used @primalkitchenfoods)

  • 1/2 lemon, juiced

  • 3 Tbs hemp seeds

  • 1 tsp dill weed

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt + pepper

  • Crushed chili flakes

  • Additional: Red bell peppers, cut in half, salad, avocado

DIRECTIONS

  1. Using clean hands, shred the chicken meat into a large bowl. Use all of it!

  2. Add in sliced grapes, avocado mayo, mustard, lemon juice, hemp seeds and all seasonings.

  3. Mix well and refrigerate if needed.

  4. Take half a bell pepper and stuff chicken salad mixture inside. I served mine with power greens, avocado, tomatoes and @go_raw pumpkin seeds. Lemon juice and extra virgin olive oil as dressing!
