Chickpea Tikka Masala
INGREDIENTS
1 can organic garbanzo beans
1 jar @wholefoods 365 organic tikka masala (super clean ingredients!)
1 red bell pepper, chopped
1/2 yellow onion, chopped (or 1 tsp onion powder)
1 Tbs hemp seeds
1/2 cup organic mushrooms, chopped
1 tbs minced garlic
Optional: Spinach
1 tsp curry powder (I use @frontiercoop)
Black pepper
Turmeric
1 lime
Cilantro
Avocado oil (I use @chosenfoods)
DIRECTIONS
Chop up bell pepper, onion and mushrooms. Add to large pan with avocado oil and sautee for 3-5 mins over medium heat.
Add strained and rinsed chickpeas to pan with minced garlic (and spinach, if using). Top with black pepper and turmeric (anti-inflammatory qualities when paired together) and curry powder. Cook additional 2 mins until garlic is fragrant.
Pour @wholefoods tikka masala sauce over beans and vegetable mixture in pan. Squeeze in half lime juice and reduce heat to low for 5 mins, stirring frequently.
Eat over organic jasmine rice and top with fresh cilantro, more hemp seeds and lime!
