Chickpea Tikka Masala

INGREDIENTS

  • 1 can organic garbanzo beans

  • 1 jar @wholefoods 365 organic tikka masala (super clean ingredients!)

  • 1 red bell pepper, chopped

  • 1/2 yellow onion, chopped (or 1 tsp onion powder)

  • 1 Tbs hemp seeds

  • 1/2 cup organic mushrooms, chopped

  • 1 tbs minced garlic

  • Optional: Spinach

  • 1 tsp curry powder (I use @frontiercoop)

  • Black pepper

  • Turmeric

  • 1 lime

  • Cilantro

  • Avocado oil (I use @chosenfoods)

DIRECTIONS

  1. Chop up bell pepper, onion and mushrooms. Add to large pan with avocado oil and sautee for 3-5 mins over medium heat.

  2. Add strained and rinsed chickpeas to pan with minced garlic (and spinach, if using). Top with black pepper and turmeric (anti-inflammatory qualities when paired together) and curry powder. Cook additional 2 mins until garlic is fragrant.

  3. Pour @wholefoods tikka masala sauce over beans and vegetable mixture in pan. Squeeze in half lime juice and reduce heat to low for 5 mins, stirring frequently.

  4. Eat over organic jasmine rice and top with fresh cilantro, more hemp seeds and lime!
