Whole30 Buffalo Chicken Stuffed Sweet Potatoes

INGREDIENTS

2 organic chicken breasts
The New Primal Buffalo Sauce
2-3 Sweet Potatoes 
Onion powder
Garlic powder 
Pepper 
Avocado oil or oil of choice 
Optional Toppings: Greek Yogurt & Cilantro

DIRECTIONS

  1. Preheat oven to 400 degrees. Rinse and poke holes into sweet potatoes. Lightly coat them with oil and wrap in foil. Bake for 40-45 minutes.

  2. When you have about 20 mins left to cook potatoes, cut breasts in half long ways and coat with onion powder, garlic powder and pepper. 

  3. Cook chicken 2-3 minutes on each side. Remove from pan, shred chicken with two forks, then add back to pan. It's okay if it's not fully cooked yet. 

  4. Cover shredded chicken with buffalo sauce and turn heat to low to warm sauce. If your chicken is fully cooked, you only need to do this for a minute or so. 

  5. Take sweet potatoes out of the oven, cut in half and mash down. Top with shredded buffalo chicken, greek yogurt and cilantro. 

  6. Add veggies of choice on the side.
