Vegan Protein-Packed Pumpkin Mac N Cheese

INGREDIENTS

*organic is best when possible!

  • 1 box @eatbanza chickpea shells or pasta of choice

  • @traderjoes cashew fiesta dip (or regular melty cheese if non-vegan)

  • 1/4 cup pumpkin puree

  • 1/2 zucchini

  • 1/3 cup bella mushrooms

  • 1 tsp minced garlic

  • Baby spinach

  • Avo oil or EVOO

  • Seasonings: onion powder, black pepper, optional chili flakes

  • Optional: 1 Tbs hemp seeds *added protein, healthy fats and minerals; 1/2 Tbs nutritional yeast *vegan cheesy flavor; 1/4 cup organic bone broth *added nutrients/non-vegan

DIRECTIONS

  1. Cook Banza pasta in pot, strain and rinse, set aside.

  2. Using same empty pot, add oil to medium heat and add chopped zucchini and mushrooms. Cook for 5-7 minutes (add bone broth here if using), then add in your spinach and minced garlic until wilted and fragrant.

  3. Add about 1/2 of the TJ's fiesta dip tub and pumpkin puree to the pot to melt and throw in the pasta. Stir and add hemp seeds, seasonings and nutritional yeast if using.

  4. Top with microgreens for added nutrients!
