Vegan Red Lentil Curry Soup

INGREDIENTS

  • 1 can organic coconut milk (13.5 oz)

  • 2 cups @traderjoes chicken bone broth

  • 3 Tbs organic tomato paste

  • 2 tsp ginger paste

  • 1 Tbs Thai Kitchen GF red curry paste (available at regular grocery stores or amazon)

  • 1.5 cup red split lentils

  • 1 yellow onion

  • 1 red bell pepper

  • 1 cup rainbow carrots

  • 1 zucchini

  • 1/2 lime juice

  • 2 cloves garlic

  • 1 Tbs curry powder

  • 1 Tbs turmeric

  • 1 tsp red chili flakes

  • Black pepper to taste

  • Cilantro (optional topping)

DIRECTIONS

  1. Chop red bell pepper, onion, zucchini, baby carrots and garlic and put into crock pot.

  2. Add all remaining ingredients to the crock pot and stir well so that all seasonings and pastes mix.

  3. Cook on low for 3 hours before serving (should make 4-5 servings)

  4. Top with cilantro
