#TacoTuesday just got better with Taco Zucchini Boats

INGREDIENTS:

  • 2 large organic zucchini

  • Grassfed ground beef (or ground lean turkey breast)

  • Low Sodium taco seasoning (or even amounts of paprika, chili powder, cumin, onion powder & black pepper)

  • Salsa of choice

  • Black beans (no salt added)

  • Fresh cilantro

  • Shredded cheese (I used @so_delicious vegan mozz)

  • Serve on the side: sauteed fajita veggies - red onion, red bell pepper, mushrooms

DIRECTIONS:

  1. Preheat oven to 400

  2. Slice zucchini in half longways. Using a small spoon, scoop out of the inside of the zucchini to create a "boat"

  3. Spray zucchini with avocado or olive oil and add black pepper

  4. Bake boats for 12 mins

  5. While boats bake, sautee ground beef or turkey. Strain excess fat, add taco seasoning and strained/rinsed black beans.

  6. When boats are ready, put beef and bean mixture inside. Top with salsa and shredded cheese. Bake 5 more minutes to melt.

  7. Take boats out of the oven, top with freshly chopped cilantro and serve with fajita veggies, avocado and hot sauce.
