Anti-Inflammatory Chicken Noodle Soup (feels like a hug)

Whether you’re sick or homesick, this anti-inflammatory chicken noodle soup will make you feel better. It feels like a hug around your soul! Bone broth is great for immune health and gut health (with lots of collagen to support your healthy skin and bones!). I added in some turmeric and black pepper (when combined, these two ingredients tag team inflammation extremely well). Plus some lemon juice for extra vitamin C!

Ingredients:

  • 2-3 Chicken Breasts

  • 1 package of egg noodles (or noodle of choice)

  • 1 onion, diced

  • 2 carrots, peeled and diced

  • 2 celery ribs, diced

You can also use Trader Joes Mirepoix mix (time saver!)

  • 3 cloves garlic, minced

  • 8 cups bone broth (I like Bonafide, Epic Provisions or Trader Joes)

  • 2-3 sprigs of fresh rosemary

  • 2-3 sprigs of fresh thyme

  • Salt and Pepper

  • 1 Tbs turmeric

  • Extra virgin olive oil

  • 1 lemon

Directions:

  1. In a big soup pot, sautee onions, carrots, celery (or mirepoix mix from Trader Joes) with garlic for 3-5 mins on medium heat.

  2. Sprinkle salt, pepper to taste and turmeric (turmeric and black pepper together are a great anti-inflammatory tag team).

  3. Add in full uncooked chicken breasts and rosemary and thyme springs. Pour over your bone broth.

  4. Boil chicken in medium high heat for 20-25 mins.

  5. Take only chicken out and place on a cutting board. Using two forks, shred chicken breasts to desired size pieces.

  6. Add chicken back in with the broth and veggies.

  7. Add in egg noodles to boiling broth and chicken mixture - cook the same amount of time directed on box.

  8. Squeeze fresh lemon juice over it all for vitamin C and serve!
