Gluten-Free Chicken Parm (Date-Night or Girl's Night Recipe!)

Ingredients:

  • 4 small chicken breasts (or two cut in half)

  • Gluten Free Flour

  • 3-4 eggs

  • Gluten Free Bread Crumbs

  • Fresh Basil

  • Garlic Powder

  • Italian Seasoning

  • Salt and pepper

  • Gluten Free Spaghetti (I love Jovial Brown Rice Pasta)

  • Marinara Sauce (I love Raos, Otamot, Pizza Girl - any one will work, just look for no added cane sugar and low sodium if possible!)

  • Mozzarella ball

  • Grated parm

Directions:

  1. Preheat oven to 425

  2. Using meat pounder, pound out chicken breasts to thin them out.

  3. Make three bowls for your breading: a bowl of gluten free flour, bowl of mixed eggs, and a bowl of bread crumbs.

  4. In your bread crumbs bowl, add bread crumbs, garlic powder, italian seasoning, salt and pepper to taste. Mix.

  5. Dip chicken breasts individually in this order and cover: flour, egg wash, bread crumb mix.

  6. Add them to a tin-foil lined and oil sprayed baking sheet.

  7. Bake them for 30 mins at 425.

  8. While baking, take gluten free pasta and cook to directions on the box.

  9. Once chicken is done baking for 30 mins, take out and take a little bit of marinara with a spoon to put on each one.

  10. Cover chicken breast with a slice of mozzarella and sprinkle with parm cheese.

  11. Throw in oven at same heat or broil on high for 2-3 mins.

  12. Use remaining marinara on pasta and cover.

  13. Serve pasta and final chicken with fresh basil, chili flakes (if you want spice) and parm.
