Veggie Loaded Vegan Mac N Cheese

INGREDIENTS

  • 1 box @eatbanza pasta

  • 1 tub @traderjoes vegan cashew queso

  • 1 cup chopped bella mushrooms

  • 1.5 cup chopped kale

  • 1 tsp minced garlic

  • Avocado oil

  • 1-2 Tbs vegan butter (@miyokoscreamery) or avo oil (@chosenfoods)

  • Onion powder

  • Pink Salt + Black pepper

  • Optional: Microgreens to top, 1 tbs nutritional yeast for vegan cheesy flavor

DIRECTIONS

  1. Preheat oven to 375. On baking sheet, spread chopped kale out and spray with avo oil or oil of choice. Lightly season with s+p and onion powder. Bake for 15 mins then set aside.

  2. Cook banza pasta to directions and rinse in colander. Set aside.

  3. In empty pasta pot, melt vegan butter or add avo oil. Sautee chopped mushrooms and garlic until fragrant. Add in tub of TJs vegan queso and adjust heat to low to melt it into sauce.

  4. Stir pasta and baked kale into cheese sauce. Add onion powder, s+p and nutritional yeast if using. Top with microgreens!
