DF & GF Heart of Palm Pasta Bake

INGREDIENTS

  • 1 can @palmini_pasta linguine (or regular cooked pasta! I also love Banza)

  • 1 lb organic grass-fed beef (I use @traderjoes)

  • 2 cups organic marinara (I use @raoshomemade sensitive marinara)

  • 1/3 cup vegan mozzarella (I use @so_delicious)

  • 1 Tbs minced garlic

  • 1 tsp Italian seasoning

  • 1/2 tsp onion powder

  • 1/2 zucchini

  • Organic baby spinach

  • 1 red bell pepper

  • Other vegetables as desired: mushrooms, onions, etc.

DIRECTIONS

  1. Preheat oven to 300

  2. In a large pan, cook the beef on medium heat and separate into crumbles. Drain the excess fat liquid and place meat in a bowl on the side.

  3. Chop your vegetables and cook in the pan for 5-7 mins (add a drizzle of olive oil if needed).

  4. Strain the palmini pasta and add in cooked pasta with garlic and cook until fragrant, 1-2 min.

  5. Add seasonings and cooked beef and cover in marinara to your liking, 1-2 cups. Turn stove to low and heat through.

  6. Add entire mixture to 9X9 baking dish. Cover the top with vegan or organic mozarella. Cook 10-15 minutes, until melted.
